Stir-Fried Melinjo with Anchovies

Ingredients

  • 200 grams melinjo skin
  • 1 handful anchovies, fried crisp (not too salty)
  • 1 handful bean sprouts (optional)
  • 2 stink beans, peeled and sliced
  • 1 bay leaf
  • 2 cm galangal, smashed
  • 1 teaspoon granulated sugar
  • 1 teaspoon palm sugar, grated
  • salt to taste
  • stock powder to taste

Sliced spices

  • 5 shallots, sliced
  • 4 garlic cloves, sliced
  • 3 large red chilies, sliced (optional)
  • 6 red bird's eye chilies, sliced
  • 1 handful green bird's eye chilies, whole

Preparation

  1. Clean the melinjo skin, boil briefly for 5 minutes, drain, and slice.

  2. Heat oil and sauté shallots and garlic until wilted, then add bay leaf and galangal.

  3. Add all chilies and sauté until wilted, stirring on low heat.

  4. Add palm sugar, granulated sugar, stock powder, and salt.

  5. Sauté until the palm sugar melts.

  6. Add bean sprouts and cook until wilted, then add stink beans and melinjo skin, and stir evenly.

  7. Add the fried anchovies.

  8. Check the taste.

  9. Serve.
