Stir-Fried Rice Noodles with Petai
Ingredients
- 2 portions rice vermicelli
- Meatballs as needed, about 10 pieces
- 2 packs petai beans
- 2 eggs
- Sliced vegetables as desired
- Sliced green onions and chilies as needed
- Water as needed
- Sweet soy sauce as needed
- 2 tablespoons oyster sauce
- Oil for sautéing
Ground spices
- 5 cloves garlic
- 4 shallots
- Ground pepper to taste
- Salt to taste
- Sugar to taste
Preparation
Soak the rice vermicelli until it expands.
Heat a pan, scramble the eggs and set aside.
Sauté the ground spices until fragrant, add the meatballs, then add the sliced vegetables and petai beans. Stir, then add salt, sugar, ground pepper, sweet soy sauce, and oyster sauce. Mix well, add the rice vermicelli and scrambled eggs, sprinkle a little water so the vermicelli absorbs the flavors, and stir-fry until the seasonings are well mixed.
Finally, add the sliced green onions and chilies, taste test, and remove from heat to serve.
Notes
This can be served as a full meal without rice.
