Warm Salmon and Zoodle Lunch Bowl
Ingredients
- 1 piece of salmon
- Trader Joe's chili lime seasoning
- avocado oil
- 1 zucchini
- ghee
- tomatoes
- mushrooms
- Trader Joe's everyday seasoning
- feta cheese
- 1/2 avocado
- sweet potatoes
Preparation
Spiralize 1 zucchini to make zoodles.
Preheat oven to 400°F.
Slice sweet potatoes and roast for 40 minutes, flipping after 20 minutes to make chips.
Heat avocado oil in a cast iron skillet over medium heat.
Season salmon with Trader Joe's chili lime seasoning and cook for 3 minutes on each side.
Heat ghee in a pan over medium heat and sauté zoodles for 4-5 minutes.
Broil tomatoes until softened.
Sauté mushrooms with Trader Joe's everyday seasoning in a pan.
Assemble the dish with broiled tomatoes, sautéed mushrooms, feta cheese, and 1/2 avocado for serving.
