Warm Salmon and Zoodle Lunch Bowl

Ingredients

  • 1 piece of salmon
  • Trader Joe's chili lime seasoning
  • avocado oil
  • 1 zucchini
  • ghee
  • tomatoes
  • mushrooms
  • Trader Joe's everyday seasoning
  • feta cheese
  • 1/2 avocado
  • sweet potatoes

Preparation

  1. Spiralize 1 zucchini to make zoodles.

  2. Preheat oven to 400°F.

  3. Slice sweet potatoes and roast for 40 minutes, flipping after 20 minutes to make chips.

  4. Heat avocado oil in a cast iron skillet over medium heat.

  5. Season salmon with Trader Joe's chili lime seasoning and cook for 3 minutes on each side.

  6. Heat ghee in a pan over medium heat and sauté zoodles for 4-5 minutes.

  7. Broil tomatoes until softened.

  8. Sauté mushrooms with Trader Joe's everyday seasoning in a pan.

  9. Assemble the dish with broiled tomatoes, sautéed mushrooms, feta cheese, and 1/2 avocado for serving.
