Colorful Cast Iron Skillet Salmon Dinner Bowl

Ingredients

  • 1 piece of salmon
  • avocado oil
  • BBQ rub
  • tomatoes
  • feta
  • 1 purple sweet potato
  • mushrooms
  • zucchini
  • 1/2 avocado
  • red pepper flakes

Preparation

  1. Bake the purple sweet potato at 400°F for 50 minutes.

  2. Cook the salmon in a cast iron skillet with avocado oil and BBQ rub for 3 minutes on each side.

  3. Sauté the mushrooms and zucchini until tender.

  4. Prepare tomatoes with feta and set aside.

  5. Slice 1/2 avocado and sprinkle with red pepper flakes.

  6. Assemble all ingredients into a bowl for serving.
