Colorful Cast Iron Skillet Salmon Dinner Bowl
Ingredients
- 1 piece of salmon
- avocado oil
- BBQ rub
- tomatoes
- feta
- 1 purple sweet potato
- mushrooms
- zucchini
- 1/2 avocado
- red pepper flakes
Preparation
Bake the purple sweet potato at 400°F for 50 minutes.
Cook the salmon in a cast iron skillet with avocado oil and BBQ rub for 3 minutes on each side.
Sauté the mushrooms and zucchini until tender.
Prepare tomatoes with feta and set aside.
Slice 1/2 avocado and sprinkle with red pepper flakes.
Assemble all ingredients into a bowl for serving.
