Famous Oat Clusters from Well Your World
Ingredients
- 2 tablespoons ground flax seed
- 2 cups rolled oats
- 2 ripe bananas
- 6-8 deglet dates, pitted
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/2 cup nuts (optional)
Preparation
In a small bowl, stir together the flax seed with 4-5 tablespoons of water and set aside.
Add the bananas, dates, cinnamon, and vanilla to a food processor and blend until smooth.
Add the nuts, if using, and pulse a few times to break them up.
Add the flax-water mixture and the banana mixture to a bowl with the oats and stir well.
Use clean hands to make 1-2-inch balls, flattening them slightly to prevent rolling.
Drop the clusters onto a baking sheet lined with parchment paper.
Bake at 350°F for 20 minutes.
Flip the clusters over and bake for an additional 5-10 minutes.
These clusters store well in the freezer for easy snacking or later use.
Experiment with walnuts or add cocoa/carob powder for flavor variations.
