Famous Oat Clusters from Well Your World

Ingredients

  • 2 tablespoons ground flax seed
  • 2 cups rolled oats
  • 2 ripe bananas
  • 6-8 deglet dates, pitted
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 cup nuts (optional)

Preparation

  1. In a small bowl, stir together the flax seed with 4-5 tablespoons of water and set aside.

  2. Add the bananas, dates, cinnamon, and vanilla to a food processor and blend until smooth.

  3. Add the nuts, if using, and pulse a few times to break them up.

  4. Add the flax-water mixture and the banana mixture to a bowl with the oats and stir well.

  5. Use clean hands to make 1-2-inch balls, flattening them slightly to prevent rolling.

  6. Drop the clusters onto a baking sheet lined with parchment paper.

  7. Bake at 350°F for 20 minutes.

  8. Flip the clusters over and bake for an additional 5-10 minutes.

  9. These clusters store well in the freezer for easy snacking or later use.

  10. Experiment with walnuts or add cocoa/carob powder for flavor variations.
