Vegan Banana Oat Pancakes

Ingredients

  • 2 cups rolled oats
  • 2 ripe bananas
  • 1/2 cup almond milk
  • 1/2 TBS baking powder
  • 2 TBS apple cider vinegar
  • 1 TBS maple syrup

Optional additions

  • 1/2 tsp cinnamon

Preparation

  1. Blend the oats, bananas, almond milk, baking powder, apple cider vinegar, and maple syrup together until smooth

  2. If using cinnamon, stir it into the batter

  3. Heat a non-stick pan or griddle over medium heat and lightly grease it with oil or butter

  4. Pour about 1/4 cup of batter for each pancake onto the pan

  5. Cook until bubbles form on the surface, then flip and cook the other side until golden brown

  6. Remove from pan and serve warm, optionally with toppings like fruit or syrup
