Hearty Oatmeal with Raspberries and Seeds
Ingredients
- 1/3 cup rolled oats
- 1 tbsp ground flax seed
- 1/2 tsp cinnamon
- 1 mashed banana
- Pinch of salt
- 1/2 cup unsweetened almond milk
Toppings
- frozen raspberries
- chia seeds
- peanut butter
- cocoa nibs
- pumpkin seeds
Preparation
Heat frozen raspberries with chia seeds.
Add rolled oats, ground flax seed, cinnamon, mashed banana, salt, and almond milk to a saucepan and bring to a simmer.
Stir and cook for about 3 minutes, then remove from heat.
Top the oats with the heated raspberry mixture, peanut butter, cocoa nibs, and pumpkin seeds.
Health notes
Provides lots of fiber and antioxidants from raspberries, zinc and magnesium from nibs and pumpkin seeds, and heart-healthy soluble fiber from oats.
