Pumpkin Spice Oatmeal with Caramelized Bananas
Ingredients
- 1/3 cup rolled oats
- 2 tbsp pumpkin purée
- 1/2 tsp pumpkin pie spice
- 1-2 tsp brown sugar
- Pinch of salt
- 1 cup almond milk
Toppings
- 1 banana
- Maple syrup, to taste
- Pinch of salt
- 1 tsp vegan butter (optional)
- Nut butter, for serving
Preparation
Combine rolled oats, pumpkin purée, pumpkin pie spice, brown sugar, salt, and almond milk in a saucepan
Bring to a low simmer over medium heat
Cook, stirring occasionally, until thickened to desired consistency, about 3-5 minutes
Remove from heat and stir well
Caramelized bananas
Slice banana into coins
Heat a non-stick pan over medium heat
Place banana coins in the pan with maple syrup and a pinch of salt
Cook until browned on both sides, about 2-3 minutes per side
For extra caramel flavor, add vegan butter and cook until edges are deeply browned
Serving
Serve the pumpkin oats warm, topped with caramelized bananas and nut butter
