Cherry Tortilla Pies

Ingredients

  • three cups pitted cherries, roughly chopped ⁣
  • two tbsp maple syrup ⁣
  • 1 tsp vanilla bean extract ⁣
  • 1 tbsp cornflour mixed into 2 tbsp cold water ⁣
  • 6 small tortillas ⁣
  • 1 egg⁣
  • 1/3 cup flaked almonds ⁣

Preparation

  1. Preheat the oven to 180c⁣

  2. Put the pitted cherries, maple syrup and vanilla into a pan over medium heat

  3. Cook for ten minutes till the cherries release some of their juices

  4. Pour in the cornflour slurry, mix well and take off the heat

  5. Lay our the tortilla and divide the mixture between them

  6. Make sure to keep the mixture in the middle

  7. Break the egg into a small bowl and whisk

  8. Brush the egg around the cherry mixture going right up to the edges of the tortilla

  9. Fold in half to form a semi circle and using a fork firmly press around the edge to seal the pies ⁣

  10. Brush the tops with the egg wash

  11. Sprinkle with the almonds and use more egg to ‘stick’ the almonds on

  12. Bake for around 10 minutes till the top is golden brown

  13. Let them cool a little and enjoy
