Homemade Mini Simit Pizza
Ingredients
- 500 g flour (4 cups)
- 300 ml water (1.5 cups)
- 20 g sugar (1 tablespoon)
- 80 ml olive oil (8 tablespoons)
- 12 g salt (1 heaping teaspoon)
- 10 g dry yeast (use half if preparing dough overnight)
Filling
- 100 g strained cheese
- 100 g labneh cheese
- Parsley (to taste)
- 2 tablespoons milk
Coating
- 30 g grape molasses (2.5 tablespoons)
- 60 ml water (6 tablespoons)
- 1 egg white
- Roasted sesame seeds (amount not specified)
Preparation
Place flour in a mixing bowl and make a well in the center
Add yeast, sugar, and lukewarm water, then wait about 5 minutes for the yeast to activate
Add the remaining ingredients and knead the dough until smooth, adjusting with a little water or flour if the dough is too stiff or too soft
Let the dough rise until doubled in size
Divide the dough into 20 equal pieces
Dip each piece first in the molasses mixture, then in sesame seeds, and let them rise again for about 15 to 20 minutes
Shape the dough pieces by pressing with a glass twice in the middle to create a indentation
Add the cheese filling to the center and press down slightly
Bake in a preheated oven at 180 degrees Celsius on the rack just above the middle in a fan-assisted oven until the top is golden brown
Tips
If preparing the dough overnight, use half the yeast amount and shape it the night before for baking in the morning
Optionally add sucuk (Turkish sausage) to the filling for extra flavor
