Overnight Soaked Porridge Oats with Cinnamon and Dates

Ingredients

  • 1/2 cup oats (organic)
  • 2 tbsp almond yoghurt
  • 1/2 tsp cinnamon powder
  • 1 finely chopped medjool date
  • 1/2 cup plant-based milk for soaking
  • Additional 1/2 to 1 cup plant-based milk for cooking

Preparation

  1. Place the oats, almond yoghurt, cinnamon powder, and finely chopped medjool date in a pan or bowl.

  2. Pour over 1/2 cup of plant-based milk, stir well, cover, and leave to soak overnight.

  3. In the morning, add 1/2 to 1 cup of plant-based milk to the pan and gently heat, stirring regularly until cooked; it will cook faster than unsoaked oats.

  4. Once ready, spoon into a bowl and top with bananas, berries, dates, or any other desired toppings.
