Tasty Chickpea Salad Sandwich with Fresh Herbs

Ingredients

  • 2 cans chickpeas, rinsed and drained
  • 1/3 purple onion, finely chopped
  • 2 stalks celery, finely chopped
  • 3 sprigs dill, minced
  • 1/3-1/2 cup hummus of preference
  • 2 tsp smoked paprika
  • 2 tsp garlic powder
  • 1/4 tsp salt
  • 1 lemon, juiced

Preparation

  1. Add chickpeas to a bowl and mash lightly using a potato masher or fork.

  2. Add in the remaining ingredients and stir to evenly distribute.

  3. Adjust seasoning as desired.

  4. Spread on bread to make sandwiches or use with chips or crackers.

  5. This recipe makes about 4 sandwiches depending on the size of bread.
