Cacao Crunch Smoothie Bowl with Toppings

Ingredients

  • 40g cashew nuts
  • 1/4 cup oats
  • 1 tbsp chia seeds
  • 1 heaped tbsp coconut yoghurt
  • 1/2 cup coconut milk
  • 1 heaped tbsp cacao powder
  • 1/2 avocado

Toppings

  • chia jam
  • bananas
  • tahini
  • chia seeds
  • blueberries
  • 1 chunk chopped dark chocolate
  • buckwheat groats
  • cacao nibs

Preparation

  1. Soak 40g cashew nuts overnight in water.

  2. Add 1/4 cup oats, 1 tbsp chia seeds, 1 heaped tbsp coconut yoghurt, 1/2 cup coconut milk, stir, cover, and leave overnight.

  3. In the morning, drain and rinse the cashew nuts.

  4. Add the cashew nuts to the blender with the oat mixture, add 1 heaped tbsp cacao powder and 1/2 avocado, then blend until smooth.

  5. If necessary, add a splash more mylk to achieve desired consistency.

  6. Spoon the mixture into a bowl and top with chia jam, bananas, tahini, chia seeds, blueberries, one chunk of chopped dark chocolate, buckwheat groats, and cacao nibs.
