Savory Protein Waffle with Egg and Veggie Toppings
Ingredients
Waffle batter
- 1/2 cup Bob's Red Mill protein pancake mix
- 1/2 cup unsweetened almond milk
- 1 egg white
Toppings
- 1 egg
- ghee
- mushrooms
- tomato
- feta cheese
- 1/2 avocado
- Trader Joe's everything but the bagel seasoning
Preparation
Mix the waffle batter by combining 1/2 cup Bob's Red Mill protein pancake mix, 1/2 cup unsweetened almond milk, and 1 egg white.
Cook the waffle using a waffle iron or as per package instructions.
Fry 1 egg in ghee.
Sauté mushrooms in ghee.
Prepare toppings by adding tomato with feta cheese and 1/2 avocado seasoned with Trader Joe's everything but the bagel seasoning.
Assemble by topping the cooked waffle with the fried egg, sautéed mushrooms, and other prepared toppings.
