Vegan Pumpkin Cauliflower Oats Breakfast

Ingredients

  • 2/3 cup oats
  • 1 1/3 cup water or plant milk
  • cauliflower (grated or riced)
  • 1/4 cup pumpkin purée
  • 1/3 scoop vegan protein powder

Toppings

  • blackberries
  • raspberries
  • almond butter
  • brown rice cacao crisps
  • shredded coconut flakes

Preparation

  1. Combine 2/3 cup oats and 1 1/3 cup water or plant milk in a pot and heat on medium heat.

  2. While the oats begin to cook, grate the cauliflower or pulse it in a food processor.

  3. Once the oats and water come to a boil, add the riced cauliflower and mix thoroughly.

  4. Add 1/4 cup pumpkin purée and mix together.

  5. Turn the heat to low and add 1/3 scoop of vegan protein powder.

  6. Add your favorite toppings and enjoy.

  7. For super thick oats, this method is highly recommended.
