Healthy Vegan Baked Oatmeal with Nuts and Fruits
Ingredients
- 1 cup rolled oats
- 3/4 cup quick oats
- 2 tbsp ground flax seeds
- 1 tbsp chia seeds
- 1/2 cup chopped and toasted nuts of choice (almonds, pecans, pistachios, etc)
- 1/4 cup dried fruit of choice (raisins, chopped dates, apricots, etc)
- 1/2 tbsp cinnamon
- 1/4 tsp sea salt
- 2 cup hot water
- 1/2 cup non-dairy milk
- 1 tsp vanilla extract
- optional (to add sweetness): 2 tbsp maple syrup or 1 mashed banana
For serving
- non-dairy yogurt
- fresh/frozen fruit
- nut/seed butter
- nuts/seeds
Preparation
Preheat the oven to 400ºF or 200ºC. Line a 9 by 5 loaf pan with parchment paper or grease with oil.
Mix the oats, seeds, nuts, dried fruit, cinnamon, and sea salt in a large bowl. Add the hot water into the bowl and let the mixture absorb the water for approx. 5 minutes. The resulting texture should be quite thick.
Add the milk, vanilla, and optional sweetner to the same bowl. Stir until everything is combined.
Pour the oatmeal into the prepared baking pan, and bake on the center rack for 40 minutes.
Serve the baked oatmeal warm a few minutes after baking or save it for another day in the fridge or freezer. Simply reheat in the oven or microwave. Enjoy with desired toppings, such as non-dairy yogurt, fruit, nut/seed butter, and nuts/seeds for crunch.
