Cardamom Oats with Baked Peaches and Nutty Toppings
Ingredients
- 1/2 cup rolled oats
- 1 tsp chia seeds
- 1/4 tsp cinnamon
- 1/4 tsp cardamom
- Pinch of salt
- 1 cup unsweetened soy milk
- 1 fresh peach
- A little cinnamon
- A little cardamom
- Pinch of salt
- Date syrup
- Blueberries
- Pepitas
- Hemp hearts
- Cacao nibs
- Walnuts
Preparation
Preheat oven to 350F. Sprinkle a fresh peach with a little cinnamon, cardamom, a pinch of salt, and date syrup, then bake until soft.
In a saucepan, combine 1/2 cup rolled oats, 1 tsp chia seeds, 1/4 tsp cinnamon, 1/4 tsp cardamom, a pinch of salt, and 1 cup unsweetened soy milk.
Bring the mixture to a simmer and cook, stirring, for about 5 minutes until thickened.
Serve the oats with the warm baked peaches on top, and add toppings such as blueberries, pepitas, hemp hearts, cacao nibs, and walnuts.
Tip: Baking less sweet fruits helps bring out their natural sweetness for a more satisfying dish.
