Cardamom Oats with Baked Peaches and Nutty Toppings

Ingredients

  • 1/2 cup rolled oats
  • 1 tsp chia seeds
  • 1/4 tsp cinnamon
  • 1/4 tsp cardamom
  • Pinch of salt
  • 1 cup unsweetened soy milk
  • 1 fresh peach
  • A little cinnamon
  • A little cardamom
  • Pinch of salt
  • Date syrup
  • Blueberries
  • Pepitas
  • Hemp hearts
  • Cacao nibs
  • Walnuts

Preparation

  1. Preheat oven to 350F. Sprinkle a fresh peach with a little cinnamon, cardamom, a pinch of salt, and date syrup, then bake until soft.

  2. In a saucepan, combine 1/2 cup rolled oats, 1 tsp chia seeds, 1/4 tsp cinnamon, 1/4 tsp cardamom, a pinch of salt, and 1 cup unsweetened soy milk.

  3. Bring the mixture to a simmer and cook, stirring, for about 5 minutes until thickened.

  4. Serve the oats with the warm baked peaches on top, and add toppings such as blueberries, pepitas, hemp hearts, cacao nibs, and walnuts.

  5. Tip: Baking less sweet fruits helps bring out their natural sweetness for a more satisfying dish.
