Peanut Cake with Creamy Peanut Filling

Ingredients

  • 3 cups self-rising flour
  • 3 cups sugar
  • 3 eggs
  • 100g roasted and ground peanuts
  • 100g butter
  • 1 cup milk (or as needed for homogeneous batter)

Filling and topping

  • 1 (14 oz) can sweetened condensed milk
  • 1 tablespoon butter
  • 4 tablespoons roasted and crushed peanuts

Preparation

Cake

  1. Beat sugar, butter, and eggs in a mixer until creamy

  2. Add flour, peanuts, and milk; beat until combined

  3. Pour batter into a greased and floured cake pan

  4. Bake in a preheated oven at 350Β°F (175Β°C) until a toothpick inserted comes out clean

Filling

  1. Combine sweetened condensed milk, butter, and peanuts in a saucepan

  2. Cook over medium heat, stirring constantly, until it reaches a soft fudge-like consistency

Assembly

  1. Let the cake cool completely

  2. Spread the filling over the cake or split the filling in half to fill and top the cake
