Peanut Cake with Creamy Peanut Filling
Ingredients
- 3 cups self-rising flour
- 3 cups sugar
- 3 eggs
- 100g roasted and ground peanuts
- 100g butter
- 1 cup milk (or as needed for homogeneous batter)
Filling and topping
- 1 (14 oz) can sweetened condensed milk
- 1 tablespoon butter
- 4 tablespoons roasted and crushed peanuts
Preparation
Cake
Beat sugar, butter, and eggs in a mixer until creamy
Add flour, peanuts, and milk; beat until combined
Pour batter into a greased and floured cake pan
Bake in a preheated oven at 350Β°F (175Β°C) until a toothpick inserted comes out clean
Filling
Combine sweetened condensed milk, butter, and peanuts in a saucepan
Cook over medium heat, stirring constantly, until it reaches a soft fudge-like consistency
Assembly
Let the cake cool completely
Spread the filling over the cake or split the filling in half to fill and top the cake
