Traditional Brazilian Minas Cheese Cookies

Ingredients

  • 6 eggs
  • 6 tablespoons sugar
  • 6 tablespoons grated parmesan cheese
  • 300g margarine
  • 1 tablespoon baking powder
  • 1kg all-purpose flour

Glaze

  • 2 cups water
  • 700g sugar
  • 2 packages shredded coconut

Preparation

  1. Beat egg whites until stiff

  2. Add egg yolks and sugar and beat

  3. Add cheese, baking powder, and margarine and beat a little more

  4. Gradually add flour and knead by hand until the dough comes away from the fingers

  5. Shape into small rolls similar to gnocchi and cut into small pieces

  6. Place on a greased and floured baking sheet

  7. Bake in a preheated medium oven for about 15 minutes or until golden

Glaze

  1. In a saucepan, combine sugar and water and bring to a boil until thickened

  2. Dip the baked cookies in the syrup

  3. Roll the dipped cookies in shredded coconut

  4. Serve immediately
