Cheese-Stuffed Potato Patties
Ingredients
- 2 large potatoes
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup shredded cheddar cheese
- 1 tablespoon soft butter
- 1 large egg
- 1 tablespoon chopped green onion
Filling
- 2 tablespoons cream cheese
- 1/4 cup shredded cheddar cheese
For frying
- 2 tablespoons butter
Preparation
In a large pot, place the potatoes, add a tablespoon of salt and cover with water, cook on medium heat until done, then peel them.
Using a potato masher, mash them while warm and let cool.
Add salt, pepper, nutmeg, cheese, butter, and egg, mix well, then refrigerate for about an hour to firm up.
Sprinkle flour on the table.
Place the potato mixture, sprinkle chopped green onion and mix, then mix with flour while shaping into a wide cylinder, continue to mix with flour to make it cohesive and cylindrical.
Cut into 4 or 5 pieces with a knife, sprinkle more flour, and shape into thick round discs, about an inch or slightly more.
Heat butter in a skillet, add the potato discs, cook for about 2 minutes until golden on the bottom, then carefully flip to the other side.
Place in a wide tray, make a simple indentation in the middle.
Put a little cream cheese in the indentation then sprinkle some cheddar cheese.
Heat the broiler, place under the broiler for a few minutes to melt the cheese, then serve hot.
Tips
Alternatively, instead of melting the cheese in the oven, you can cover the pan and let it sit for a few minutes to melt the cheese.
