Easy Cottage Cheese Omelet
Ingredients
- 3 large eggs
- 1.5 tablespoons unsalted butter
- 2 teaspoons olive oil
- 1/3 cup cottage cheese
- 1 tablespoon thinly sliced chives
- Kosher salt
Preparation
Whisk the eggs.
Heat a skillet over medium heat.
Add the butter and olive oil, swirl until melted, then reduce the heat to low.
Pour the eggs into the skillet and shake and swirl to spread them to the edges.
Cook until the edges start to set, about 15 to 20 seconds.
Cover and cook, shaking and uncovering often to check doneness, until the edges are set but the center is still a little wet, 2 to 3 minutes.
Season with salt.
Arrange the cottage cheese about 1.5 inches from one edge of the omelet.
Use a rubber spatula to roll the omelet.
Transfer to a plate and garnish with chives.
Notes
This omelet is often served for dinner rather than breakfast.
Use low heat to keep the eggs soft and buttery without toughening the proteins.
