Grilled Salmon with Potato Salad and Salsa

Potato salad

Shrimp salsa

  • mango
  • cilantro
  • chili flakes
  • olive oil
  • lime juice

Mushrooms

Preparation

  1. Brush the salmon with olive oil, lime, honey, chili powder, flaked salt, and freshly ground black pepper, then grill until cooked through.

  2. Boil firm potatoes until tender, then mix with red onion, capers, dill, parsley, chives, Greek yogurt, mayonnaise, and lemon to make the potato salad.

  3. Combine shrimp, corn, red onion, red bell pepper, mango, cilantro, chili flakes, olive oil, lime juice, flaked salt, and freshly ground black pepper to prepare the shrimp salsa.

  4. Quarter the mushrooms, thread them onto skewers, grill until tender, and season with flaked salt and freshly ground black pepper.
