Maple Toasted Coconut and Wild Blueberry Porridge

Ingredients

  • 1/2 cup rolled oats
  • 1-2 Tbsp maple syrup
  • 1 Tbsp coconut flakes
  • 2 Tbsp dried wild blueberries
  • 1 Tbsp hemp seeds
  • 1 cup almond milk

Preparation

  1. Soak the rolled oats in filtered water for at least a few hours before cooking.

  2. Cook the soaked oats with almond milk until thickened.

  3. Optionally, lightly toast the coconut flakes in a dry pan for 2 minutes.

  4. Add dried wild blueberries to the cooking porridge or prepare a compote by cooking them with boiling water and syrup.

  5. Top the prepared porridge with maple syrup, toasted coconut flakes, and hemp seeds.

Tips

  1. When purchasing oats, look for organic, wheat-free varieties in health food aisles.

  2. Beta-glucan in oats lowers cholesterol and enhances immune response to bacterial infections.

  3. Limit servings to 1/2 cup to avoid bloating, especially for those with IBS.
