Stir-Fried Cucumber and Mushroom

Ingredients

  • 50g black wood ear mushroom
  • 2 cucumbers
  • 1 egg
  • Water as needed
  • Instant stock
  • Salt as needed
  • Green onions as needed
  • Ground pepper as needed
  • 2 shallots
  • 2 garlic cloves
  • 1 green tomato
  • 5 bird's eye chilies

Preparation

  1. Sauté the shallots and garlic until fragrant, add the egg and scramble it, then add the black wood ear mushroom and stir well. Pour in water as needed and let it boil.

  2. Add salt, instant stock, ground pepper, sliced chilies, and tomato pieces, then stir well.

  3. Add the cucumber pieces and stir well, then adjust the seasoning to taste.

  4. Before removing from heat, add the sliced green onions, stir briefly, then remove from heat.

  5. Serve while hot.
