Vegan Apple Crumble Cake
Ingredients
- 500 g spelt flour
- 250 g cold vegan margarine
- 200 g sweetener (such as coconut blossom sugar)
- 3 teaspoons soy flour
- Water (for egg substitute)
- 2.5 teaspoons baking powder
- Vanilla
- Cinnamon
- Approximately 3 apples
- Optional: soy milk
Preparation
Whip 3 teaspoons of soy flour with a little water to make the egg substitute.
Knead 500 g spelt flour, 250 g cold vegan margarine, and 200 g sweetener by hand to form the crumble mixture.
Divide the mixture in half.
Place one half in the refrigerator to chill.
Add the prepared soy flour eggs, 2.5 teaspoons baking powder, vanilla, cinnamon, and soy milk if the batter is too dry, then mix well.
Spread the dough evenly in a greased baking dish.
Arrange apple wedges from approximately 3 apples on top of the dough.
Sprinkle cinnamon over the apples.
Spread the reserved crumble mixture over the top.
Bake in an oven preheated to 180 degrees Celsius for about 40 minutes.
Tips
Check for doneness by observing the color; it should be golden brown.
