Beef Kwetiau Siram Stir-Fry

Ingredients

  • Flat rice noodles (kwetiau)
  • Garlic
  • Soy sauce
  • Oyster sauce
  • Sweet soy sauce (optional)
  • Chopped choy sum or sweet cabbage
  • 1 egg
  • 1 tablespoon tapioca flour or sago flour
  • Sliced beef, as needed
  • Seasoning powder or MSG
  • Mushroom stock
  • Salt
  • Pepper
  • Shaoxing wine (optional)
  • Sesame oil

Preparation

  1. Stir-fry the kwetiau noodles with garlic, soy sauce, and oyster sauce until fragrant, then remove and arrange on a plate.

  2. In a separate pan, stir-fry garlic in sesame oil until fragrant.

  3. Add the beef and cook until it changes color.

  4. Pour in water, add vegetables and seasonings including seasoning powder, mushroom stock, oyster sauce, soy sauce, salt, pepper, and shaoxing wine, then bring to a boil.

  5. Thicken the sauce with a slurry made from tapioca flour.

  6. Add the beaten egg and stir well.

  7. Add more sesame oil and mix thoroughly.

  8. Pour the sauce over the prepared kwetiau noodles and serve.

Tips

  1. Adjust the amount of tapioca flour based on the quantity of kwetiau cooked to achieve the desired thickness.
