Everyday Cake with Oil
Ingredients
- 1 cup full-fat milk
- 1 tablespoon white vinegar or apple cider vinegar
- 2 cups flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 cup fine-grained sugar
- 1 1/3 cups corn oil
Preparation
Set the middle rack in the oven and preheat to 180°C.
Grease a 10-inch round pan with vegetable shortening or butter and dust with flour; set aside.
Add vinegar to milk and let it sit for a few minutes to curdle like buttermilk.
Sift flour, baking powder, salt, and cinnamon in a bowl or on paper; set aside.
In a mixer bowl, add eggs, vanilla, and sugar. Use the whisk attachment and beat on medium speed until creamy. Then, on low speed, gradually add oil until incorporated, followed by the milk mixture, continuing to beat on low speed.
Add the flour mixture and beat on low speed until the flour disappears, then beat for 1 minute until smooth.
Pour the batter into the prepared pan. Bake for 40-45 minutes and test for doneness.
Remove from oven, let cool on a wire rack for a few minutes, then remove the cake from the pan and cool completely.
Tips
Sprinkle on the cake some blueberries, finely chopped apple mixed with a teaspoon of cinnamon, or nuts like almond slices, ground walnuts, pistachios.
You can vary the flavors with additions such as ginger, cardamom, almond extract, and more. The additions to this cake are endless, allowing for a new taste every day.
