Homemade Dino Chicken Nuggets

Ingredients

  • 1 pound boneless chicken, par frozen
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon celery salt (optional)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon MSG (optional)

Dredge

  • Flour, lightly seasoned with salt, pepper, and garlic powder
  • Eggs
  • Panko breadcrumbs

Preparation

  1. Blend the nugget ingredients in a food processor to create a meat farce, ensuring it remains chunky and not overmixed.

  2. Press the mixture onto a lightly greased parchment paper-lined sheet tray and freeze for 30 minutes.

  3. Use a cookie cutter to cut out dinosaur-shaped nuggets and place them on a plate or sheet tray, then return to the freezer until ready for the next step.

  4. Prepare the dredge with seasoned flour, beaten eggs, and panko breadcrumbs.

  5. Dredge each chilled nugget first in flour, then in egg, and finally in panko breadcrumbs.

  6. Cook the nuggets by frying or baking until golden brown and cooked through.

  7. Freeze the cooked nuggets for storage and reheat in the oven when ready to serve.

Tips

  1. Use par-frozen chicken to help maintain texture and prevent the mixture from becoming a paste.

  2. Work intermittently in and out of the freezer if the mixture or shapes become difficult to handle.

  3. Chicken can be white meat, dark meat, or a combination based on preference.

  4. MSG and celery salt are optional and can be omitted if unavailable.
