Authentic Japanese Okonomiyaki Pancake

Ingredients

  • 80g all-purpose flour
  • 1 tsp dashi
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 eggs
  • 125 ml water
  • 150g cabbage, thinly sliced
  • 50g carrot, grated
  • 100g shrimp or squid

Toppings

  • Okonomiyaki sauce
  • Mayonnaise
  • Bonito flakes

Preparation

  1. Mix the flour, dashi, baking powder, salt, pepper, eggs, and water until smooth.

  2. Add the cabbage and shrimp or squid, and stir until combined.

  3. Grease a non-stick pan with oil, pour in the batter, flatten it, cook until done, flip, and cook the other side until done then remove from pan.

  4. Place on a serving plate, spread with okonomiyaki sauce, then mayonnaise, and sprinkle with bonito flakes.

  5. Serve and enjoy.
