Sugar-Free Energy Laddoos with Oats and Dates

Ingredients

  • 6 dates
  • 1.5 cups dry roasted instant oats
  • 1/2 cup flaxseeds (dry roasted and coarsely ground)
  • 2 tablespoons peanut butter
  • 2 tablespoons chopped cashews and almonds
  • Cashews for topping

Optional additions

  • Chia seeds
  • Additional dry fruits

Preparation

  1. Soak 6 dates in 2 tablespoons warm water for 1-2 hours, remove seeds, blend into a fine puree in a mixer jar, and transfer to a bowl.

  2. In a mixing bowl, add 1.5 cups dry roasted instant oats.

  3. Add 1/2 cup coarsely ground flaxseeds.

  4. Add 2 tablespoons peanut butter.

  5. Add 2 tablespoons chopped cashews and almonds.

  6. Add the date puree and 2 tablespoons virgin coconut oil, then mix all ingredients well with hands.

  7. Take portions of the mixture and roll into round laddu shapes.

  8. Place a cashew piece on top of each laddu.

Tips

  1. Chia seeds can also be used as an alternative or addition.

  2. Include other dry fruits as desired for variation.

  3. These laddus can be stored in the refrigerator for up to 7 days.
