Overnight Oats with Maple Cinnamon Peaches

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds or ground flax seeds
  • 1 tsp sweetener of your choice or 1 mashed medjool date
  • Pinch of cardamom
  • Pinch of cinnamon
  • Pinch of salt
  • 3/4 cup unsweetened plant milk (I used almond milk)
  • Cooked Peaches
  • 1 peach, sliced thin
  • 2 tsp maple syrup
  • Pinch of salt
  • Pinch of cinnamon

Preparation

  1. Combine all ingredients together and set overnight in the fridge

  2. You can leave it in a bowl, place in Tupperware container or do whatever fancy thing you like to do with your oats

  3. Add peaches to a saucepan and cook on low medium heat for about 3 minutes

  4. Add maple syrup, cinnamon and salt and begin to stir and coat peaches with mixture

  5. Stir and cook for about 3 more minutes or until peaches have softened

  6. Remove from heat and serve overtop oats
