Baobab Peanut Butter Spread and Cinnamon Milk

Ingredients

Baobab peanut butter

  • 1/2 cup peanut butter (smooth or crunchy, or any nut or seed butter)
  • 1/2 cup tiger nut milk (or any plant milk)
  • 1/2 cup baobab powder
  • 1/2 to 2 tablespoons date molasses and maple syrup (optional, amount depends on desired sweetness; can omit)
  • pinch of salt

Cinnamon milk

  • 2 teaspoons baobab powder
  • 1 cup warm oat milk
  • a bit of cinnamon (to taste)
  • vanilla (amount not specified)
  • 1 teaspoon honey or coconut nectar

Preparation

  1. Combine peanut butter and milk, whisk until well combined and smooth

  2. Add sweetener and whisk to incorporate

  3. Add salt and baobab powder, whisk until smooth and creamy; add more milk if needed for consistency

  4. Place the mixture in a jar and refrigerate

  5. For cinnamon milk, whisk baobab powder with warm oat milk

  6. Add cinnamon, vanilla, and honey or coconut nectar, whisk until blended

Serving suggestions

  1. Spread the baobab peanut butter on sourdough bread

  2. Sprinkle with cacao nibs and toasted nuts

  3. Add banana slices for garnish and serve alongside the cinnamon milk
