Chewy Cacao Nib Cookies
Ingredients
- 1/2 cup almond milk
- 1 egg
- 1 1/4 cup almond flour
- 1 cup oat flour
- 1/2 tsp. baking powder
- 1/4 cup coconut sugar
- 1/4 cup cacao nibs
Preparation
Preheat oven to 350F and spray/line a baking sheet
In a large bowl, whisk together the egg and milk then stir in the dry ingredients
Using an ice-cream scoop or two spoons, place dough balls onto the baking sheet
I wet a spoon with a little water and dipped it into a little bit of oat flour to flatten the cookies slightly—this helps the spoon not stick to the dough
Mine made 15 cookies!) Bake for 8 minutes and enjoy
