Chewy Cacao Nib Cookies

Ingredients

  • 1/2 cup almond milk
  • 1 egg
  • 1 1/4 cup almond flour
  • 1 cup oat flour
  • 1/2 tsp. baking powder
  • 1/4 cup coconut sugar
  • 1/4 cup cacao nibs

Preparation

  1. Preheat oven to 350F and spray/line a baking sheet

  2. In a large bowl, whisk together the egg and milk then stir in the dry ingredients

  3. Using an ice-cream scoop or two spoons, place dough balls onto the baking sheet

  4. I wet a spoon with a little water and dipped it into a little bit of oat flour to flatten the cookies slightly—this helps the spoon not stick to the dough

  5. Mine made 15 cookies!) Bake for 8 minutes and enjoy
