My Zesty Oatmeal

Ingredients

  • • 1 cup rolled oats
  • • 1/2 cup water
  • • 1/2 cup plant-based milk
  • • 2 tbsp Mandarin juice
  • • 1 tsp Mandarin zest
  • • 1 tsp vanilla
  • • 2 tbsp chia seeds
  • • A pinch of salt
  • • A palm full of crunchy cashews and sweet raisins
  • • A spoonful of sweetener (Hint: It’s honey!?)
  • • Toppings
  • • Sprinkle some pumpkin seeds
  • • A bunch of tart blueberry
  • • A dollop of silky peanut butter
  • • Some toasted almonds

Preparation

  1. Take a saucepan and add milk, water, oats, chia seeds, vanilla and salt

  2. Let the concoction cook on medium heat

  3. Keep stirring between intervals and stop cooking when the mixture starts to simmer

  4. Add mandarin juice, mandarin zest, and the dry fruits

  5. Pour it in a big bowl and start layering it with your favourite toppings

  6. Voila! you’re done✅

  8. Pro tip: want to get a creamy texture? mix the oatmeal and cold water together in the saucepan first and then begin to heat
