Pillowy Gingerbread Cacao Cookies

Ingredients

  • 2 flax eggs
  • 1/4 cup almond milk
  • 1.5 tbsp @miyokos_kitchen vegan butter or coconut oil
  • 1 tbsp soft coconut butter
  • 1 tbsp blackstrap molasses
  • 1 tbsp maple syrup
  • 1 tsp pure vanilla bean or extract
  • 1 tbsp cacao powder
  • 2/3 cup @bobsredmill paleo or almond flour
  • 1/2 tbsp ground ginger
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp Sea salt for the dough
  • 1 tsp Sea salt for the sprinkle
  • 1 tsp Baking soda
  • Coconut shreds for topping

Preparation

  1. Mix the wet ingredients until well combined.

  2. Add the dry ingredients and mix until cookie dough forms.

  3. Using a cookie dough scooper or spoon, arrange balls onto lined baking sheet.

  4. Using a fork, slightly press the cookies down.

  5. Sprinkle with sea salt and coconut.

  6. Bake 350 for 15 minutes!
