Pillowy Gingerbread Cacao Cookies
Ingredients
- 2 flax eggs
- 1/4 cup almond milk
- 1.5 tbsp @miyokos_kitchen vegan butter or coconut oil
- 1 tbsp soft coconut butter
- 1 tbsp blackstrap molasses
- 1 tbsp maple syrup
- 1 tsp pure vanilla bean or extract
- 1 tbsp cacao powder
- 2/3 cup @bobsredmill paleo or almond flour
- 1/2 tbsp ground ginger
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp Sea salt for the dough
- 1 tsp Sea salt for the sprinkle
- 1 tsp Baking soda
- Coconut shreds for topping
Preparation
Mix the wet ingredients until well combined.
Add the dry ingredients and mix until cookie dough forms.
Using a cookie dough scooper or spoon, arrange balls onto lined baking sheet.
Using a fork, slightly press the cookies down.
Sprinkle with sea salt and coconut.
Bake 350 for 15 minutes!
