Raspberry Vanilla Oats Breakfast Bowl
Ingredients
- 3/4 cup oats (quick or rolled)
- 3/4 cup water
- 1 cup raspberries (frozen work well)
- 0.5 tsp vanilla extract
- 2 tbsp maple syrup
- 0.5 cup mango chunks (thawed if using frozen)
- small handful of fresh raspberries
- 1 tbsp chopped pistachios
- 2 tsp desiccated coconut
- 1 tsp dark chocolate shavings
- A splash of coconut milk to serve (or other plant-based milk)
Preparation
Put the oats, water and raspberries in a pot, bring to a boil and reduce the heat. Let simmer for 2-5 minutes (depending on if you use quick or rolled oats) until thick and creamy.
Add vanilla and maple syrup to the oatmeal, stir and take off the heat.
Pour the oatmeal in a bowl. Top with mango, raspberries, a splash of coconut milk, pistachios, coconut and chocolate shavings.
