Barley Salad with Fresh Vegetables and Herbs

Ingredients

  • 1 cup barley soaked in water for 6 hours
  • 1 tsp salt
  • 1 tsp onion powder
  • 4 cups hot water
  • 2-3 cucumbers cubed
  • 2 tomatoes, diced
  • 1 green onion sliced

Sauce

  • 1/4 cup lemon juice
  • 2 tablespoons olive oil (not intended for cooking)
  • 1 tablespoon thyme (zaatar)
  • 1 tablespoon mint
  • 1 tsp onion powder
  • Pinch of salt and black pepper

Preparation

  1. Boil water with salt and onion powder

  2. Add the barley and cook on low heat for 30 minutes and then drain the water

  3. Mix the sauce ingredients and then add vegetables to it

  4. After the barley has cooled, add it to the salad and enjoy
