Easy Healthy Pickled Vegetables
Ingredients
- 1 medium red onion
- 1 carrot
- 1/2 cucumber
- Herbs to taste (such as mustard seeds, dill, and black pepper)
- 350 ml boiling water
- 250 ml white vinegar or apple cider vinegar
- 2 tablespoons sugar
Preparation
Peel the red onion and slice all vegetables into thin rings, preferably using a mandoline.
Place the vegetables in a large glass jar.
Pour in the boiling water and vinegar, add two tablespoons of sugar, and refrigerate for at least 3 hours.
Serving and storage
Serve in a salad, with a curry, or on bread. It can be stored in the refrigerator for up to 2-3 weeks.
