White Chocolate Raspberry Ripple Overnight Oats

Ingredients

  • 50g rolled or jumbo oats
  • 30g vanilla soy protein powder
  • Few vanilla flavdrops or 1/8 teaspoon vanilla extract
  • 1 teaspoon sugar free maple syrup (optional)
  • 150ml unsweetened almond milk
  • 10 raspberries
  • 20g white chocolate
  • 5ml coconut oil

Preparation

  1. Mash 8 raspberries using a fork and set aside.

  2. Mix the oats, protein powder, vanilla flavdrops and almond milk together in a bowl.

  3. Make a small well in the centre and place the mashed raspberries into the centre. Cover over with the oats mixture.

  4. Melt the white chocolate and coconut oil together and pour over the oats.

  5. Place a couple of broken raspberries on top and place in the fridge for at least 4 hours or overnight.

Notes

  1. If you don’t use protein powder, add 2-3 teaspoons of maple syrup for sweetness and reduce the almond milk by about 60-80 milliliters, adding more if needed.
