Savory Egg and Veggie Breakfast

Ingredients

  • 1 egg
  • 1/2 avocado
  • Brussel sprouts
  • Sweet potatoes
  • Mushrooms
  • Tomatoes
  • Ghee
  • Trader Joe's everything but the bagel seasoning

Preparation

  1. Preheat oven to 400°F

  2. Roast Brussel sprouts at 400°F for 30 minutes.

  3. Slice sweet potatoes into chipsand roast at 400°F for 20 minutes on each side.

  4. Fry 1 egg in ghee.

  5. Sauté mushrooms.

  6. Sauté tomatoes.

  7. Slice avocado and season with everything but the bagel seasoning

  8. Assemble all components on a plate
