Easy Vegan Vegetable Soup

Ingredients

  • 2 cups organic low sodium veggie broth
  • 2 cups water
  • 1 can organic diced tomatoes
  • 1 cup organic broccoli
  • 1 chopped organic zucchini
  • 1 cup chopped organic crimini mushrooms
  • 1 cup chopped organic yellow bell pepper
  • 1 cup veggie pasta spirals

Seasonings

  • Himalayan pink salt to taste
  • Garlic powder to taste
  • Black pepper to taste
  • Oregano to taste

Preparation

  1. Bring veggie broth, water, and diced tomatoes to a boil in a pot

  2. Add broccoli, zucchini, mushrooms, and bell pepper to the pot and simmer until vegetables are tender

  3. Cook the veggie pasta spirals separately according to package instructions.

  4. Season the soup with Himalayan pink salt, garlic powder, black pepper, and oregano to taste.

  5. When serving, add the desired amount of cooked pasta to each bowl to prevent it from getting mushy.
