Quick and Healthy Rhubarb Breakfast Crumble
Ingredients
- 3 heaped tbsp oats, blended to a flour (gluten-free if required)
- 2 heaped tbsp oats
- 1 heaped tsp reduced-fat margarine (or any margarine)
- Pinch of ground ginger
- 2 tbsp syrup of choice
- 1 stick of rhubarb
Preparation
Chop the rhubarb into small chunks and place them in a bowl of water. The water should nearly cover the rhubarb.
Microwave the bowl of rhubarb for two minutes.
Meanwhile, blitz the oats in a blender until they resemble fine breadcrumbs.
In another bowl, mix the blended oats, margarine, ginger, and 1 tbsp syrup to create a crumble consistency.
Microwave the crumble mixture for one minute.
Drain the rhubarb and swirl in the remaining 1 tbsp syrup.
Pour the crumble mixture over the rhubarb.
Serve with yogurt (such as soy or coconut).
