Goji Berries & Apple Overnight Oats (Bircher Muesli)

Ingredients

  • 2 grated apples
  • 2 tablespoons of chopped goji berries
  • 4 cups of oats
  • 2 tablespoons of flaxseeds
  • 3 finely chopped dates
  • 1 cup of coconut milk
  • 1 cup of cold water
  • 1 cup of plant-based yogurt

Toppings

  • Banana
  • Homemade jam of your choice
  • Sesame seeds or nuts

Preparation

  1. In a bowl, combine grated apples, chopped dates, pitted goji berries, oats, and flaxseeds.

  2. Mix everything thoroughly with yogurt, coconut milk, and cold water.

  3. Cover the bowl and refrigerate for at least 2 hours or overnight to allow the oats to soak.

  4. Fill individual bowls or jars with the overnight oats.

  5. Top with your favorite marmalade, sliced banana, and sprinkle with sesame seeds or nuts.

  6. For a creamier consistency, you can mix in an additional spoonful of yogurt before serving.
