Sweet Potato Toast Four Ways
Ingredients
- 1 Japanese sweet potato
- Fried egg
- Micro greens
- Everything but the bagel seasoning
- Organic peanut butter
- Honey
- 1/2 avocado
- Red pepper flakes
- Grass-fed yogurt
- Blueberries
- Gr8nola
Preparation
Preheat oven to 400F.
Bake the Japanese sweet potato for 40 minutes.
Allow the sweet potato to cool and cut it into four pieces.
For the first toast: top with a fried egg, micro greens, and everything but the bagel seasoning.
For the second toast: spread organic peanut butter and swirl in honey.
For the third toast: add half an avocado and sprinkle with red pepper flakes.
For the fourth toast: top with grass-fed yogurt, warmed blueberries, and gr8nola.
The toasts can be prepared in advance and eaten cold for convenience.
