Sweet Potato Toast Four Ways

Ingredients

  • 1 Japanese sweet potato
  • Fried egg
  • Micro greens
  • Everything but the bagel seasoning
  • Organic peanut butter
  • Honey
  • 1/2 avocado
  • Red pepper flakes
  • Grass-fed yogurt
  • Blueberries
  • Gr8nola

Preparation

  1. Preheat oven to 400F.

  2. Bake the Japanese sweet potato for 40 minutes.

  3. Allow the sweet potato to cool and cut it into four pieces.

  4. For the first toast: top with a fried egg, micro greens, and everything but the bagel seasoning.

  5. For the second toast: spread organic peanut butter and swirl in honey.

  6. For the third toast: add half an avocado and sprinkle with red pepper flakes.

  7. For the fourth toast: top with grass-fed yogurt, warmed blueberries, and gr8nola.

  8. The toasts can be prepared in advance and eaten cold for convenience.
