Meal Prepped Salmon and Vegetables for Lunch
Ingredients
- 1 piece of salmon
- basil
- tomatoes
- Brussels sprouts
- cauliflower
- 1 sweet potato
- mushrooms
- ghee
- 1/2 avocado
- Trader Joe's everything but the bagel seasoning
Preparation
Cook salmon over medium heat for 3 minutes on each side with basil.
Roast Brussels sprouts at 400°F for 40 minutes.
Roast cauliflower at 400°F for 40 minutes.
Bake sweet potato at 400°F for 45 minutes, then turn off oven and leave for another 45 minutes.
Sauté mushrooms in ghee.
Season 1/2 avocado with Trader Joe's everything but the bagel seasoning.
