Meal Prepped Salmon and Vegetables for Lunch

Ingredients

  • 1 piece of salmon
  • basil
  • tomatoes
  • Brussels sprouts
  • cauliflower
  • 1 sweet potato
  • mushrooms
  • ghee
  • 1/2 avocado
  • Trader Joe's everything but the bagel seasoning

Preparation

  1. Cook salmon over medium heat for 3 minutes on each side with basil.

  2. Roast Brussels sprouts at 400°F for 40 minutes.

  3. Roast cauliflower at 400°F for 40 minutes.

  4. Bake sweet potato at 400°F for 45 minutes, then turn off oven and leave for another 45 minutes.

  5. Sauté mushrooms in ghee.

  6. Season 1/2 avocado with Trader Joe's everything but the bagel seasoning.
