Winter Warming Papaya Porridge with Compote

Ingredients

Porridge

  • 1/2 cup rolled oats
  • 1 cup filtered water
  • Pinch salt
  • 1/2 cup milk of choice
  • 1 tsp pure vanilla extract

Compote

  • 1/2 cup frozen blueberries
  • 1/2 tsp finely grated ginger
  • Splash water
  • 1 tsp chia seeds

Toppings

  • 1/2 papaya, skin removed

Preparation

  1. The night before, soak oats in water and salt in a small saucepan.

  2. In the morning, add milk and vanilla. Cook over a low-medium flame, bringing to the boil then simmering for approximately 10 minutes. Stir continuously and add extra milk as needed. Serve while hot with generous slices of fresh papaya, a drizzle of pure maple syrup, compote, and nut butter.

Compote

  1. Add berries, ginger, and water to a small saucepan. Cook over a low flame for approximately 10 minutes, stirring regularly.

  2. Add chia seeds and continue cooking gently until thick.

Tips

  1. Papayas are rich in antioxidant nutrients such as carotenes, vitamin C, and flavonoids, and contain papain, an enzyme that aids digestion. They are also a good source of fiber and minerals like potassium, copper, and magnesium.
