Baked Mashed Potato Eggs

Ingredients

  • 1 cup leftover mashed potatoes
  • 2 eggs
  • 2 tablespoons shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Green onions, for garnish

Preparation

  1. Preheat the oven to 375 degrees Fahrenheit.

  2. Place the mashed potatoes in a small oven-safe skillet and make two small wells in them.

  3. Crack the eggs into the wells, add shredded cheese around the eggs, and season with salt and pepper.

  4. Bake until the cheese has melted and the eggs are set to your liking, about 15 to 18 minutes.

Tips

  1. Garnish with green onions before serving.

  2. This recipe is perfect for using leftover mashed potatoes, especially from Thanksgiving.
