Fluffy Banana Coconut Flour Pancakes

Ingredients

  • 1/4 cup coconut flour
  • 1/4 tsp baking soda
  • 2 tbsp peanut butter
  • 2 eggs
  • 1 tbsp honey
  • 1 small banana
  • 1/4 cup milk of choice

Preparation

  1. In a large bowl, whisk together the coconut flour and baking soda. In another bowl, whisk together the remaining ingredients into a thick batter.

  2. Heat 1 tsp coconut oil in a non-stick frying pan on low to medium heat. Drop 3 tbsp of batter into the pan and cook until bubbles form on top. Flip the pancakes over and cook the other side for a couple of minutes until golden brown.

  3. Wipe the pan down and cook in batches. Makes 6-9 pancakes depending on size.

Serving suggestions

  1. Serve with coconut yogurt, maple syrup, and a generous dollop of homemade no added sugar strawberry jam.
