Quick and Easy Cinnamon Roll Baked Oats in a Mug
Ingredients
- 5 tbsp (40-50g) porridge oats, blended or not blended (gf if required)
- 3 tbsp plain yogurt or milk + extra yogurt to serve (e.g., soya yogurt)
- 1 tbsp sultanas or raisins
- 1/3 tsp cinnamon
- 1 tsp sweetener/sugar or syrup
- 1/3 tsp baking powder
- Squeeze of lemon juice
Preparation
Put all the ingredients into a cup and mix until foamy, ensuring that all the oats are combined from the bottom of the mug. If you have a blender, you can blitz the oats to a powder for a few seconds to achieve a more cake-like texture. Clean the rim of the mug with your finger.
Microwave on high for 90 seconds, or alternatively, transfer the mixture into a lined oven-proof dish and bake in the oven for 15 minutes at 180°C (350°F), gas mark 4.
Once cooked, tip the cake out onto a plate, top it with extra yogurt, and enjoy immediately.
