Vegan Matzo Brei

Ingredients

  • 2 Sheets of Matzo
  • 1-2 cups of warm Water
  • 4 Vegan Eggs ( I used 12 Tbsp of @justegg)
  • 2 Tbsp of Butter
  • Salt & Pepper

Preparation

  1. Break the Matzo in half and add it to a large bowl. Pour the Water over and let sit for about 30-45 seconds. Drain and break the Matzo into smaller 1 1/2 “ pieces. Season with Salt & Pepper and set aside.

  2. In a large skillet on med -low heat melt the Butter. Add the soaked Matzo and sauté for a minute or two or until the Matzo takes on a bit of color.

  3. Season the Egg with Salt & Pepper and pour over the Matzo making sure to cover all of the pieces.

  4. Slowly scramble the Egg & Matzo mixture until the Egg is fully cooked or to your desired doneness.

  5. Serve as is or with Ketchup & Hot Sauce.
